The oyster mushroom is here - and it's quite something. With its broad, fleshy-throated cap - which can even reach up to 15 cm in circumference - and a well-defined, short stalk, it amazes with both its size and its nutritional properties. It is very rich in umami flavor and is a treat for everyone's palate - regardless of their culinary preferences.

Studies have shown that these tasty curiosities contain a good amount of fiber, vitamin B and essential minerals (iron, potassium, copper) - while maintaining a very balanced macronutrient profile with more than 20% protein and fiber and less than 1.5% fat.
