The oyster mushroom is here - and it's quite something. With its broad, fleshy-throated cap - which can even reach up to 15 cm in circumference - and a well-defined, short stalk, it amazes with both its size and its nutritional properties. It is very rich in umami flavor and is a treat for everyone's palate - regardless of their culinary preferences.
