The Lion's Mane (Hericium erinaceus) is also known as the monkey's head or pom-pom. It is very popular among mushroom lovers! The fruiting body is beige in color, sometimes slightly reddish and can reach sizes of up to 30 cm. The mushrooms usually have short stalks and are 10-25 cm thick. The upper side is fibrous and torn. On the underside there are soft, dense spines. The Lion's Mane owes its name to these characteristics.
The flesh is whitish and has a somewhat fibrous consistency, reminiscent of seafood. Depending on how it is prepared, its taste is reminiscent of lobster, veal or poultry meat with slightly fruity aromas of coconut and lemongrass.

Supposedly good for the brain and immune system. In terms of mineral content, the Lion's Mane is on a par with other mushrooms. However, it contains an above-average amount of essential free amino acids. One study found a content of 16%. A total of 19 free amino acids could be detected; almost all essential amino acids for humans were contained.

Attention: The substrate for Lion's Mane differs from that for oyster mushrooms and has a darker color. This is completely normal and not a sign of mold. The dark color results from the special ingredients required for the growth of this mushroom.
