The hedgehog's beard (Hericium erinaceus) is also known as the monkey's head or pom-pom. It grows in our forest and is very popular among mushroom lovers! The fruiting body is beige in color, sometimes slightly reddish and can reach sizes of up to 30 cm. The mushrooms usually have short stalks and are 10-25 cm thick. The upper side is fibrous and torn. On the underside there are soft, dense spines. The hedgehog spiny beard owes its name to these characteristics.

The meat is whitish and has a somewhat fibrous consistency, reminiscent of seafood. Depending on how it is prepared, its taste is reminiscent of lobster, veal or poultry meat with slightly fruity aromas of coconut and lemongrass.

Supposedly good for the brain and immune system. In terms of mineral content, the hedgehog's goatee is on a par with other mushrooms. However, it contains an above-average amount of essential free amino acids. In one study, a content of 16 % was demonstrated. A total of 19 free amino acids were detected; almost all essential amino acids for humans were contained.
